Cocklecakes With Laverbread Recipe

Ingredients

Flour

Egg

Vegetable oil

Cockles or clams (shelled)

(heaped) chopped parsley
Oil for frying

Prepared laverbread; -OR-
½
oz.
Dried nori, reconstituted
½
Lemon (juice only)

Directions

  1. Sieve the flour.
  2. Separate the egg.
  3. Work the yolk and oil into the flour and beat in the water gradually until you have a thick batter.
  4. Whisk and leave aside for 30 minutes.
  5. Whisk the egg-white until stiff and stir into the batter.
  6. Add thc cockles, then salt, parsley and herbs as necessary.
  7. Heat two fingers of oil in a heavy pan.
  8. Deep-fry the batter in spoonfuls until the cakes are golden and crisp.
  9. Heat up the laverbread with the lemon juice.
  10. Serve piping hot, with wedges of lemon.
