Millet Loaf Recipe

Celery stalks, diced

Tahini

Wheat germ

Tomato sauce

Nutritional yeast

Directions

  1. Preheat oven to 350F.
  2. Bring water to a boil & add the millet.
  3. Cook over medium heat for 25 minutes or till the water is absorbed.
  4. Heat oil in a skillet over medium-high heat.
  5. Add onions, peppers, celery & fresh garlic.
  6. Saute for 5 minutes.
  7. Add seasonings & cook for a further 2 minutes.
  8. Mix into the millet.
  9. Add tahini & wheat germ & half the tomato sauce.
  10. Mix well & season to taste.
  11. Shape into an 8" x 12" loaf pan.
  12. Pour over remaining sauce, sprinkle yeast on top & bake for 30 minutes.
